Potato Mushroom Saute
Be sure to cut the potatoes in small cubes, otherwise it will take a long time for them to soften.
2 cups chopped fresh mushrooms
2 large russet potatoes, cut into smaller than 1/2 inch cubes
2 tbsp. chopped pimento
1/2 cup olive oil
1 clove minced garlic (or 1/4 tsp. dried minced garlic)
1/2 tsp. dried oregano
1/2 tsp. dried thyme
salt and pepper to taste
1. Heat the olive oil in a large skillet.
2. Combine all ingredients.
3. Saute for 20 minutes or until cubed potatoes are soft, but not falling apart.
